Yuga = Era
Adi = New
So Ugadi is the "start of an Era"
This heralds the beginning of the Hindu year with Chaitra as the first month in the Panchanga (Hindu Calender). It starts on the first new moon after the Sun crosses the equator from the south to the north on spring equinox.
The specific eating of the beevu - bella (neem leaves and jaggery) symbolises the fact that life is mixture of different experiences which should be accepted together with equnimity through the year!!
